Tiger Prawns at home: thawing, cleaning, and getting the best texture

From a gentle ice-water thaw to deveining without tearing the meat, small steps keep prawns snappy and help you avoid a mushy stir-fry.

Prawns are forgiving to cook and unforgiving to thaw. Warm water rushes the process and leaves the outside soft while the centre is still cold, which is where most rubbery, watery stir-fries begin.

Thaw in a bowl of ice water, or overnight in the fridge on a rack so meltwater drains away. Pat dry before cooking — a dry surface is what lets prawns colour rather than steam.

Devein with the tip of a knife along the back rather than a deep cut. Keeping the shell on until the last moment protects the meat and adds flavour to the pan.

Cook hot and briefly. Prawns are done the moment they curl into a loose C and turn opaque; a tight O means they have gone a little too far.
